45 milliliters of Olive oil
30 grams of Butter
150 milliliters of Port wine
1 ½ liter of Broth
3 Sprigs of dried thyme
1 pinch of Salt
1 pinch of Black pepper
Bread
Fresh cheese
Preparation
Step 1 : Peel the onions and cut them into tips, as well as into thin strips or half-moons to facilitate cooking.
Step 2 : In a pot, heat the oil together with the butter and add the onions along with a pinch of salt.
Step 3 : Cook on low heat for about an hour, allowing the onions to caramelize slowly and develop their sweet flavor.
Step 4 : Then, add the wine and pepper, stirring to deglaze the bottom of the pot, making sure the alcohol evaporates completely.
Step 5 : Next, add the hot broth and the sprigs of thyme, and let the mixture simmer gently for about 30 minutes so the flavors meld nicely.
Step 6 : Meanwhile, slice the bread and toast it in a toaster or oven until golden and crispy.
Step 7 : Once the soup is ready, season it with salt and pepper to taste.
Step 8 : Prepare sturdy bowls in which to serve the soup.
Step 9 : Place the toasted bread slices inside each bowl, covering them with grated cheese.
Step 10 : Put the bowls in the oven and gratinate under the grill until the cheese is golden and bubbling, which takes about 3 to 5 minutes.
Step 11 : Finally, serve the hot soup, garnished with a pinch of freshly ground black pepper to enhance its flavor.
