Ingredients

2 kilograms of Old hen

2 tablespoons of Crushed garlic

1 Onion

3 Cuban pepper

3 Potatoes

1 Carrot sliced

300 grams of Pumpkin

300 grams of Yautía

1 Green plantain

2 Tender corn on the cob

2 Green onion

1 Celery stalk

1 Fresh cilantro

1 tablespoon of Oregano

1 tablespoon of Orange souring juice

1 tablespoon of Oil

2 tablespoons of Salt

Preparation

Step 1 : Carefully clean the hen with lemon or vinegar before chopping it into pieces.

Step 2 : Peel the plantains and cut them into pieces, as well as the pumpkin, potatoes, and yautía.

Step 3 : In a pressure cooker, place the hen pieces and cover with water.

Step 4 : Add a little oregano, garlic, onion, celery, and salt, then cook over heat for 25 to 30 minutes until the hen is tender.

Step 5 : Remove the hen and strain the broth.

Step 6 : In a pot with the strained broth, add the potatoes, carrots, pumpkin, corn, plantain, yautía, garlic, pepper, onion, and green onion.

Step 7 : Cook until the vegetables are tender, then add cilantro and salt to taste.

Step 8 : Just before removing the soup from heat, add the orange souring juice.

Step 9 : Serve the soup hot, accompanied by white rice and avocado to fully enjoy its flavor.
