Dominican Lentil Soup
Ingredients
1 pound of Lentils
3 tablespoons of Olive oil
1 Red pepper
1 Red onion
1 Green pepper
4 Celery stalks
1 Bunch of cilantro
1 Garlic head
1 Bag of carrots
7 Yukon potatoes
1 Cassava
1 Pumpkin
2 Limes
2 tablespoons of Apple cider vinegar
2 teaspoons of Turmeric
2 teaspoons of Cumin
2 teaspoons of Garlic powder
2 teaspoons of Onion powder
2 Pork bones packages
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : Wash and chop vegetables such as peppers, onions, celery, and garlic into large pieces.
Step 2 : It is important to set aside half of the cilantro for later use.
Step 3 : Next, prepare a spice blend that includes salt, pepper, turmeric, cumin, garlic powder, and onion powder; set this mixture aside to use at the appropriate time.
Step 4 : To start cooking, heat a generous amount of olive oil in a large pot.
Step 5 : Add the chopped vegetables along with the remaining cilantro, allowing them to cook until they begin to soften.
Step 6 : At this point, add the prepared spice mix and the tubers, such as potatoes, carrots, cassava, and pumpkin.
Step 7 : If desired, pork bones can also be added to enhance the flavor.
Step 8 : Then, rinse the lentils and add them to the pot.
Step 9 : Fill with water up to about an inch below the top edge.
Step 10 : At this point, add lime juice and a bit of vinegar to enhance the flavors.
Step 11 : Let the mixture boil over medium-low heat, uncovered, stirring occasionally to prevent sticking.
Step 12 : The cooking takes approximately 45 minutes, allowing all ingredients to meld.
Step 13 : Once that time has passed, remove the peppers, onions, and celery from the pot and place them in a blender.
Step 14 : Let them cool for a few minutes and process until smooth purée is obtained.
Step 15 : Return this purée to the pot, reduce the heat, and cook a few more minutes to achieve the desired texture.
Step 16 : Adjust seasoning by adding more spices, lime juice, and vinegar to taste.
Step 17 : When the consistency is to your liking, the soup is ready to serve and enjoy its warm and aromatic flavor.
