Ingredients

2 cups of Cooked pigeon peas

2 Pork chop cut into pieces

1 Longaniza sausage sliced

2 Carrot

1 Green plantain

200 grams of Auyama (squash)

250 grams of Yuca (cassava)

1 Onion

1 Chopped green pepper

2 Chopped Cuban pepper

1 tablespoon of Crushed garlic

½ cup of Tomato sauce

2 cups of Chicken or vegetable broth

2 cups of Water

1 cup of Rice

1 Chopped fresh cilantro

1 tablespoon of Lemon juice

1 pinch of Salt and black pepper to taste

Preparation

Step 1 : To start, peel and cut the cuyama, carrot, plantain, and yuca into small pieces, then set aside.

Step 2 : Next, cut the pork chops and longaniza into cubes, also setting them aside.

Step 3 : Then, in a large pot with hot oil, sauté the onion, green pepper, and garlic.

Step 4 : Once sautéed, add the pork chops and longaniza and cook until they acquire an appetizing golden color.

Step 5 : Next, add the pigeon peas, squash, broth, and tomato sauce, cooking over medium-low heat until the broth begins to thicken.

Step 6 : Subsequently, add the rice and water, cooking over medium heat until the rice becomes fluffy.

Step 7 : It is important to stay attentive and stir the mixture to prevent the rice from sticking to the bottom of the pot.

Step 8 : Then, season with salt, pepper, chopped cilantro, and lemon juice, covering the pot and cooking for 5 minutes.

Step 9 : Finally, serve the dish accompanied by avocado and hot sauce for an extra touch of flavor.
