Ingredients

2 kilograms of Beef bones

1 Finely chopped onion

½ cup of Tomato paste

1 teaspoon of Crushed garlic

3 Potatoes cut into chunks

1 Pumpkin cut into chunks

1 cup of Finely chopped celery

1 teaspoon of Ground cumin

1 teaspoon of Ground dried oregano

2 tablespoons of Finely chopped cilantro

1 Sour orange

1 ½ liter of Water

2 tablespoons of Oil

½ teaspoon of Ground black pepper

1 tablespoon of Salt

Preparation

Step 1 : Place a pot over heat with a little oil and sauté the beef bones.

Step 2 : Add water and cook over medium heat for about two hours.

Step 3 : Then add the onion, tomato paste, garlic, potatoes, pumpkin, carrots, and celery.

Step 4 : Season with salt, pepper, cumin, and oregano, and let cook until the vegetables are tender.

Step 5 : Remove the bones and add the orange zest and fresh cilantro.

Step 6 : Serve hot to enjoy this restorative and flavorful soup.
