Beef Rib Soup
Ingredients
700 grams of Beef ribs
4 Potatoes
1 tablespoon of Beef broth powder
½ teaspoon of Ground cumin
8 cups of Water
3 Scallion stalks
3 Garlic cloves
1 Cilantro sprig
1 pinch of Salt
Preparation
Step 1 : In a bowl of water, place the potatoes to prevent them from oxidizing and set aside.
Step 2 : Using kitchen twine, tie the cilantro sprig and the scallions cut in half, forming an aromatic bundle.
Step 3 : In a large pot over high heat, place the ribs with enough water to cover them, add the garlic cloves, the tied cilantro bundle, the scallions, and the beef broth powder.
Step 4 : Bring everything to a boil.
Step 5 : Once it boils, reduce the heat to medium, cover the pot, and let it cook for 40 minutes.
Step 6 : Check that the meat is tender, then remove the meat from the pot.
Step 7 : Discard the cilantro sprig and the garlic cloves used in the broth.
Step 8 : Next, add the finely chopped scallions and cilantro, as well as the potatoes cut into pieces or halves.
Step 9 : Taste and, if necessary, adjust the salt.
Step 10 : Let the soup simmer over medium heat for about 25 more minutes or until the potatoes are soft.
Step 11 : Finally, serve hot and enjoy this comforting and delicious soup.
