Yuca Fritters
Ingredients
1 kilogram of Yuca, peeled and cubed
3 teaspoons of Butter
2 Eggs
4 cups of Sugar
1 teaspoon of Ground Cinnamon
2 teaspoons of Vanilla
¼ teaspoon of Ground Nutmeg
2 Cinnamon Sticks
4 cups of Water
1 Lemon
1 teaspoon of Liqueur
2 cups of Vegetable Oil
Preparation
Step 1 : To prepare the syrup, bring water, 4 cups of sugar, cinnamon sticks, and lemon zest to a boil in a saucepan.
Step 2 : Let it boil and cook until it slightly thickens.
Step 3 : Once ready, remove the cinnamon sticks, add lemon juice, a bit of vanilla, and the liqueur.
Step 4 : Mix well and let it rest.
Step 5 : Cook the yuca in salted water with a little sugar and a pinch of nutmeg.
Step 6 : Then, remove from heat and let it cool.
Step 7 : Make a purée with the yuca, butter, and a teaspoon of vanilla.
Step 8 : Add the eggs and mix the dough well.
Step 9 : Form the fritters and set aside.
Step 10 : Fry the fritters in very hot oil and place them on paper towels to remove excess grease.
Step 11 : Then, dip the fritters into the prepared syrup and refrigerate.
