Ingredients

800 grams of Cut into pieces

400 grams of Tomatoes

90 grams of Sweet bacon

2 Celery stalks

1 Carrot

½ Onion

120 milliliters of Water

Marjoram

Thyme

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : Start by washing and chopping the celery, carrot, and onion into small pieces.

Step 2 : In a pot, melt a little butter or heat some oil and sauté the onion and diced bacon for about 3 to 4 minutes, until the onion is transparent and the bacon begins to brown.

Step 3 : Then, add the chopped celery and carrot and cook for another 5 minutes, stirring occasionally so the vegetables absorb the flavors and soften slightly.

Step 4 : Add the guinea fowl pieces to the pot and brown for about 10 minutes over medium heat, always keeping the pot covered to seal in the juices and keep the meat tender.

Step 5 : Next, add the peeled tomatoes cut into chunks and enough water to partially cover the ingredients.

Step 6 : Infuse everything with marjoram and thyme, then again cover the pot and cook over medium-low heat for about 30 minutes, allowing the flavors to meld and the meat to tenderize.

Step 7 : Finally, season with salt and pepper to taste.

Step 8 : Uncover the pot and continue cooking uncovered for about 15 more minutes, until the sauce thickens and reaches a creamy consistency, ready to serve.
