Ingredients

1 kilogram of Cut goat into pieces

2 Red onion

1 Red bell pepper

1 Green bell pepper

2 Tomatoes

3 Sweet chili peppers

2 Leeks

1 tablespoon of Mashed garlic

1 tablespoon of Tomato paste

2 tablespoons of Worcestershire sauce

1 tablespoon of Ground oregano

1 teaspoon of Thyme

1 Recao (culantro)

2 Sour oranges

2 cups of Red wine

½ cup of Rum

1 liter of Vegetable broth

2 Bay leaves

3 tablespoons of Oil

1 tablespoon of Sugar

1 teaspoon of Crushed whole pepper

1 tablespoon of Salt

Preparation

Step 1 : Start by cleaning the goat meat with sour orange juice, then season it with salt, pepper, garlic, oregano, thyme, and Worcestershire sauce.

Step 2 : Next, add the rum and let it marinate in the refrigerator for several hours.

Step 3 : In a pot with oil and sugar over heat, wait for the sugar to caramelize, then add the goat pieces to sear the meat until a caramelized color is achieved.

Step 4 : Then add the chopped onions, tomatoes, peppers, and chili peppers, sautéing them for 5 minutes.

Step 5 : Pour in the marinade liquid, vegetable broth, tomato paste, bay leaves, half of the wine, and recao.

Step 6 : Cook covered over low heat for 35 minutes.

Step 7 : When the meat is tender, add the rest of the wine and adjust the seasoning as needed.

Step 8 : Continue cooking over low heat until the sauce reaches the desired consistency.

Step 9 : Finally, serve the goat stew accompanied by white rice and tostones.
