Ingredients

2 Eggplants sliced

1 pound of Ground pork

2 tablespoons of Olive oil

½ cup of Chopped onion

½ cup of Chopped green chili

2 Chopped garlic cloves

1 teaspoon of Dried oregano

1 teaspoon of Dried basil

½ teaspoon of Chili flakes

24 ounces of Tomato sauce

2 cups of Mozzarella cheese

½ cup of Water

1 pinch of Salt

1 pinch of Pepper

Preparation

Step 1 : The process begins by preheating the oven to 425°F (220°C).

Step 2 : Next, place the eggplant slices on a baking sheet, brush with oil, and sprinkle with some salt and pepper.

Step 3 : Bake them for about 15 minutes, or until tender and lightly golden.

Step 4 : Meanwhile, in a large skillet, cook the ground meat together with the onion, chili, garlic, oregano, basil, chili flakes, and remaining salt and pepper.

Step 5 : Cook until the meat is well browned.

Step 6 : Add water to the meat and let it cook for a few more minutes.

Step 7 : Then, take half a cup of the sauce and set it aside, while the rest is mixed with the meat, cooking until the sauce thickens.

Step 8 : Once the eggplant and meat are ready, assemble the lasagna by placing a layer of sauce at the bottom of a baking dish.

Step 9 : Over it, alternate layers of eggplant, meat, and grated cheese.

Step 10 : Repeat these steps until the top layer is eggplant and cheese.

Step 11 : Bake again for about 10 to 15 minutes, or until the cheese is melted and golden.

Step 12 : It’s recommended to let the lasagna rest for a few minutes before serving, so the layers settle well and it’s easier to cut.
