Dominican Patimongo
Ingredients
2 kilograms of Beef knuckles
1 ½ kilogram of Well-cleaned tripe
6 Minced garlic
½ cup of Tomato paste
1 Onion
2 Peppers to taste
1 Celery stalk
2 tablespoons of Sofrito
1 Recao
1 tablespoon of Oregano
1 teaspoon of Pepper
1 tablespoon of Salt
Preparation
Step 1 : To prepare the tripe, start by cleaning it carefully with a bit of vinegar or lemon.
Step 2 : Then, cut it into pieces and cook it in a pressure cooker along with the beef knuckles, celery, onion, peppers, garlic, salt, pepper, and oregano.
Step 3 : Add enough water to cover the ingredients and cook for approximately 35 minutes, or until the tripe is tender.
Step 4 : At this point, open the pot and add the tomato paste, recao, and sofrito.
Step 5 : Adjust the seasoning and continue cooking on low heat until the stew reaches the desired consistency.
Step 6 : Serve the tripe hot, accompanied by white rice, avocado, and spicy sauce if desired.
