Yaniqueques are traditional fried empanadas from the Dominican Republic, with a soft dough on the inside and crispy on the outside.
They are ideal as an appetizer or snack, especially in Boca Chica. The recipe combines flour, baking powder, salt, and oil to create a light and tasty dough. They are fried until a perfect golden hue is achieved and sprinkled with coarse salt.

Yaniqueques
Ingredients
2 cups of Flour
½ teaspoon of Baking powder
1 teaspoon of Salt
3 tablespoons of Vegetable oil
2 cups of Frying oil
½ teaspoon of Coarse salt
Preparation
Step 1 : The preparation begins by mixing the flour, baking powder, and salt in a large bowl.
Step 2 : Next, add the flour to a mixture of ¼ cup of water and three tablespoons of oil, and start to incorporate with a spatula.
Step 3 : Press the dough with your hands, adding more water if necessary, until it is no longer sticky and easy to handle.
Step 4 : It is important to knead only as much as needed to form a smooth ball.
Step 5 : Once ready, cover with plastic wrap and let it rest for ten minutes.
Step 6 : Then, divide the dough into equal portions, depending on the desired size of the yaniqueques: four portions for large empanadas or sixteen if you prefer smaller ones.
Step 7 : Shape each portion into a ball, then roll out with a rolling pin until very thin, almost translucent.
Step 8 : To facilitate handling and give a cleaner presentation, make small cuts around the edges of the pieces with a knife.
Step 9 : In a deep skillet, heat the oil over medium-high heat, approximately at 175°C.
Step 10 : Fry the pieces one by one, carefully turning them to brown both sides.
Step 11 : Once ready, place them on paper towels to remove excess oil.
Step 12 : Finally, sprinkle with coarse salt to taste and serve hot, enjoying their crunchy texture and authentic flavor.
