Guanimos Salados
Ingredients
½ pound of Ground beef
1 Bell pepper
1 Habanero chili
1 Onion
2 Garlic cloves
1 Parsley sprig
1 Cilantro sprig
3 tablespoons of Olive oil
1 cup of Tomato sauce
16 Corn husk leaves
String for tying
Ketchup
1 pinch of Salt
1 pinch of Pepper
Preparation
Step 1 : First, place the bell pepper, habanero chili, onion, garlic, parsley, and cilantro in a food processor.
Step 2 : These vegetables and seasonings are ground until a coarse paste is obtained.
Step 3 : Then, this seasoning paste is mixed with the ground meat, ensuring all ingredients are well integrated.
Step 4 : Next, heat oil in a skillet over medium heat.
Step 5 : The mixed meat is sautéed until fully cooked and has a uniform golden color.
Step 6 : Add the tomato sauce and cook until the liquids have fully evaporated.
Step 7 : Taste and adjust with salt and pepper as desired.
Step 8 : Set the mixture aside for later use.
Step 9 : Meanwhile, mix the corn flour with broth until a dough forms.
Step 10 : Let it rest, covered, for about an hour to achieve the right consistency. Then, bring the mixture to medium heat in a pot, stirring constantly until it thickens and sticks to the spoon.
Step 11 : After this step, allow the dough to cool.
Step 12 : To prepare the guanimos, take a corn husk leaf.
Step 13 : Place two tablespoons of dough on it, followed by one tablespoon of the meat filling.
Step 14 : Cover with more dough and form a pouch, sealing the edges with string to prevent it from opening during cooking.
Step 15 : In a large pot with about half a gallon of boiling water, place the guanimos and cook for about 10 minutes.
Step 16 : When ready, carefully remove them from the water and the husks.
Step 17 : Finally, serve hot, and if desired, they can be accompanied with ketchup for an extra touch of flavor.
