Codfish Fritters (Bacalaítos)
Ingredients
1 pound of Shredded codfish
½ Onion
¼ Small diced chili pepper
½ cup of Flour
2 Eggs
2 Garlic cloves
1 pinch of Sugar
1 tablespoon of Finely chopped parsley
1 cup of Enough oil for frying
1 pinch of Salt and pepper to taste
Preparation
Step 1 : The codfish is soaked in plenty of water for several hours and boiled in clean water until tender.
Step 2 : Then it is removed from the water and soaked again if still salty, shredded, and set aside.
Step 3 : In a bowl, the codfish is mixed with the onion, chili pepper, garlic, eggs, and a little flour.
Step 4 : A pinch of sugar, salt, and pepper is added.
Step 5 : Sufficient oil is heated in a skillet, and portions of the mixture are placed in it, frying until well golden.
Step 6 : Finally, the dish is served garnished with finely chopped parsley.
